Understanding Gas Marks
Gas marks are a temperature scale used on gas ovens in the UK and some Commonwealth countries. Each gas mark corresponds to a specific temperature, starting at Gas Mark ¼ (110°C) up to Gas Mark 9 (240°C). They're incrementally spaced: each whole number represents roughly a 14°C (25°F) increase.
Fan vs Conventional Ovens
Fan ovens (also called convection ovens) use a fan to circulate hot air throughout the oven. This means food cooks more evenly and often more quickly. The standard conversion rule is to reduce the temperature by 20°C when converting from a conventional recipe to a fan oven.
For example, if a recipe says “bake at 180°C”, use 160°C in a fan oven. You may also need to reduce the cooking time by about 10%.
